Courgette, Pea & Mint Fritters (Gluten-Free, Dairy-Free)

Ingredients:

200g courgettes (coarsely grated)

60g frozen peas (cooked and cooled, ½ mashed & ½ whole)

2 large eggs

35g Doves Farm Gluten-Free Self-Raising Flour

10g cornflour (cornstarch)

½ tsp baking powder (optional, but recommended)

10g fresh parsley, finely chopped

5-6 fresh mint leaves, finely sliced

Salt and pepper to taste

Olive oil (for frying)

Method:

Grate the courgette and place in a bowl. Sprinkle lightly with a pinch of salt and leave for 10 minutes to draw out moisture. Squeeze very firmly in a clean tea towel (or strong kitchen paper) to remove as much liquid as possible.

In a mixing bowl, combine the courgette, cooked peas (½ mashed and ½ whole), eggs, gluten-free flour, cornflour, baking powder (if using), herbs, salt and pepper. Mix until you have a thick, scoopable batter that holds its shape.

Leave the mixture to rest for 5–10 minutes to allow the flours to hydrate and help the fritters bind.

Heat a frying pan over medium heat and add a thin layer of olive oil. Spoon in small mounds of batter and gently flatten.

Cook for between 4-6 minutes on the first side until golden and set, then flip and cook for a further 2–3 minutes on the other side or until golden brown and cooked through.

Remove and drain briefly on kitchen paper. Serve warm. Enjoy!
