Bite-Size Frittata Breakfast Muffins

Makes about 6–8 muffins

Ingredients:

6 large eggs

1 red or yellow pepper, diced

2–3 spring onions, thinly sliced

A handful of cavolo nero, chopped

Salt and pepper, to taste

Optional: herbs like parsley or chives


Method:

Preheat the oven to 180°C / 350°F.

Lightly grease a muffin tin (or use silicone liners).

In a bowl, whisk the eggs with salt, pepper, and any herbs. Then mix in the vegetables. Pour the mixture evenly into the muffin cups.

Bake for 18–22 minutes, or until the frittatas are set and slightly golden on top.

Let cool slightly before removing. Enjoy warm, or store in the fridge for breakfast.
